Muschi de vita marinat cu sos cremos de shiitake si Grana Padano/Marinated beef fillet with shiitake and Grana Padano cream sauce
Ingrediente pentru vita marinata:
· 600 grame muschi de vita;
· 3 linguri ulei de masline;
· 3 catei usturoi pisati;
· 1 lingurita boabe de piper zdrobite;
· 1 lingura sos de soia;
· 1 lingura zeama de lamiae;
· 1 crenguta de rozmarin proaspat;
· sare dupa gust.
Ingrediente pentru sos:
· 200 grame ciuperci shiitake curatate si spalate;
· 120 grame Grana Padano (taiata cubulete);
· 200 mL smantana pentru gatit (30% grasime);
· 1 ardei iute rosu, tocat marunt;
· 1 ceapa mica, tocata fin;
· 1 lingura unt;
· 2 lingurite de chives tocat marunt;
· 1 lingura ulei de masline;
· sare si piper proaspat dupa gust.

Mod de preparare:
Intr-un bol se amesteca uleiul de masline cu usturoiul pisat, piperul zdrobit, sosul de soia, zeama de lamaie si rozmarinul. Se adauga feliile de vita in bol si se amesteca bine cu marinata, astfel incat fiecare bucata de carne sa fie acoperita uniform. Se acopera bolul si se lasa la frigider cel putin 2 ore, ideal peste noapte, pentru ca aromele sa patrunda. Intr-o tigaie mare se incing untul si uleiul de masline. Se adauga ceapa tocata si se caleste 2-3 minute, pana devine sticloasa. Se adauga ciupercile shiitake si se gatesc aproximativ 5 minute, pana se inmoaie. Se pune ardeiul iute tocat si 2 lingurite de chives dupa se amesteca usor. Se reduce focul, apoi se toarna smantana pentru gatit si se lasa sa dea un clocot scurt. Se adauga Grana Padano si se amesteca pana cand branza se topeste complet si se formeaza un sos cremos. La final, sosul se potriveste de sare si piper, apoi se pastreaza la cald pana la servire. Se scoate carnea din marinata si se sterge usor cu un servetel de hartie. Se incinge o tigaie cu putin ulei si se adauga feliile de vita marinate si se prajesc la foc mediu pentru 5-6 minute pe fiecare parte pentru un rezultat medium-rare, sau mai mult, in functie de preferinta. Dupa prajire, carnea se scoate si se lasa sa se odihneasca 4–5 minute pe o farfurie, acoperita cu folie de aluminiu. Se asaza feliile de vita pe farfurii, se toarna sosul cremos cu ciuperci shiitake si Grana Padano.

• 3 cloves garlic, crushed;
• 1 teaspoon crushed peppercorns;
• 1 tablespoon soy sauce;
• 1 tablespoon lemon juice;
• 1 sprig fresh rosemary;
• salt to taste.
Ingredients for the sauce:
• 200 grams shiitake mushrooms, cleaned;
• 120 grams Grana Padano (cut into cubes);
• 200 mL cooking cream (30% fat);
• 1 red chili pepper, finely chopped;
• 1 small onion, finely chopped;
• 2 teaspoons of finely chopped chive;
• 1 tablespoon butter;
• 1 tablespoon olive oil;
• salt and freshly ground pepper to taste.

Method of preparation:
In a bowl, mix the olive oil with the crushed garlic, crushed peppercorns, soy sauce, lemon juice, and rosemary. Add the beef slices to the bowl and mix well with the marinade so that each piece of meat is evenly coated. Cover the bowl and refrigerate for at least 2 hours, ideally overnight, to allow the flavors to infuse. In a large pan, heat the butter and olive oil. Add the chopped onion and sauté for 2–3 minutes until translucent. Add the shiitake mushrooms and cook for about 5 minutes until softened. Add the chopped chili, 2 teaspoons of finely chopped chive and stir gently. Reduce the heat, then pour in the cooking cream and bring to a gentle simmer. Add the Grana Padano and stir until the cheese melts completely and forms a creamy sauce. Finally, season the sauce with salt and pepper and keep warm until serving. Remove the beef from the marinade and pat dry with a paper towel. Heat a pan with a little oil, add the marinated beef slices, and sear over medium heat for 5–6 minutes on each side for medium-rare, or longer depending on your preference. After searing, remove the meat and let it rest for 4–5 minutes on a plate covered loosely with aluminum foil. Arrange the beef slices on plates and pour over the creamy sauce with shiitake mushrooms and Grana Padano.
