Clatite cu afine/Blueberry pancakes
Ingrediente:
· 200 grame faina alba;
· 250 mL kefir;
· 2 oua;
· 30 grame unt topit;
· 1 lingura miere;
· 1 lingurita esenta de vanilie;
· coaja rasa de la o lamaie;
· coaja rasa de la o portocala;
· 1/2 lingurita bicarbonat de sodiu;
· 1 lingurita praf de copt;
· un praf de sare.
Pentru servire:
· 150 grame afine proaspete;
· zahar pudra;
· unt;
· miere.

Mod de preparare:
Intr-un bol se amesteca faina cu bicarbonatul, praful de copt, zaharul, sarea, coaja de lamaie si de portocala. Intr-un alt bol se bat ouale cu kefirul, se adauga mierea si esenta de vanilie, apoi se toarna untul topit. Ingredientele lichide se toarna peste cele uscate si se amesteca usor cu telul, pana se obtine o compozitie groasa, dar fara cocoloase. Se pune o tigaie antiaderenta pe foc si se unge cu putin unt. Se toarna cate un polonic mic de aluat pentru fiecare pancake. Se gatesc aproximativ 2 minute pe prima parte, pana apar bule la suprafata, apoi se intorc si se mai lasa 2 minute pana devin aurii. Se servesc calde, cu un cub mic de unt, miere, afine si zahar pudra presarat deasupra.

• 250 mL kefir (a fermented milk drink, similar to buttermilk);
• 2 eggs;
• 30 grams melted butter;
• 1 tablespoon honey;
• 1 teaspoon vanilla extract;
• zest from 1 lemon;
• zest from 1 orange;
• 1/2 teaspoon baking soda;
• 1 teaspoon baking powder;
• a pinch of salt.
For serving:
• 150 grams fresh blueberries;
• powdered sugar;
• butter;
• honey.

Method of preparation:
In a bowl, mix the flour with the baking soda, baking powder, salt, lemon zest, and orange zest. In a separate bowl, whisk the eggs with the kefir, add the honey and vanilla extract, then pour in the melted butter. Pour the liquid ingredients over the dry ingredients and gently mix with a whisk until you obtain a thick batter without lumps. Heat a non-stick pan over medium heat and lightly grease it with a little butter. Pour a small ladle of batter for each pancake. Cook for about 2 minutes on the first side, until bubbles appear on the surface, then flip and cook for another 2 minutes until golden. Serve warm with a small pat of butter, honey, fresh blueberries, and a dusting of powdered sugar on top.
